Tomatoes in Jar

I had trouble finding sundried tomatoes that I mainly use as toppings for pizza, pasta, and sometimes I do use it in my lasagna ragu. Hence, I thought of making cherry tomatoes-in- jar which has a nice smoky flavor, infused with aromatic herbs. This version is super easy and does not need an oven! Perfect also for a simple bruschetta.



Prep Time: 2 minutes

Cooking Time: 5-10 minutes

Serving: 3-5 pax

Ingredients

  • 500 gm cherry tomatoes, halved

  • 2-3 cloves of garlic, whole (smashed)

  • Sprig of rosemary

  • Sprig of dill

  • 2-3 sweet basil leaves, chopped

  • Salt to taste

  • Sugar to taste

  • Some rice bran oil (for glazing pan)

  • 1/4 cup extra virgin oil

Preparation

  1. Pat dry washed cherry tomatoes and halve it

  2. Heat up the pan (medium heat) and glaze lightly with rice bran oil (best use non-stick pan)

  3. Place garlic cloves and herbs (except for basil) and lightly stir fry it until aromatic, and take it out into the jar. Fill the jar with 1/4 cup of extra virgin oil and basil leaf.

  4. Place tomatoes onto the same pan and leave it for 2-3 minutes. Toss it to brown the other side for another 2-3 minutes. If the tomatoes aren't sweet enough, I recommend adding brown sugar (extra caramelization) and add salt, if preferred.

  5. Take out tomatoes and let them cool. Once reach room temperature, place the tomatoes in the jar and let it infuse for at least 4 hours.

Ready to serve with baguette, or turned into your favorite tomato sauce :)
